2 cups shredded or chopped chicken

½ cup + 4 tbsp barbecue sauce

2 cups shredded sharp cheddar cheese

½ red onion, diced

¼ cup chopped fresh cilantro

4 8-inch soft flour tortillas

Non-stick cooking spray

Prepare the Chicken Mixture: In a bowl, combine the chicken with ½ cup of barbecue sauce and stir until evenly mixed. Set aside.

Assemble the Quesadillas:

On each flour tortilla, spread 1 tbsp of barbecue sauce, leaving a border.

Sprinkle ¼ cup of cheese over half of the tortilla.

Top the cheese with a quarter of the chicken mixture, followed by onions and cilantro.
