Ingredients

For the Pasta:

  • 16 ounces spaghetti or pasta of your choice

  • Salt for cooking the pasta

For the Steak:

  • 2 ribeye steaks (about 8 ounces each)

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon dried thyme

  • 2 tablespoons olive oil

For the Sauce:

  • 4 tablespoons unsalted butter

  • 6 cloves garlic, minced

  • 1/2 teaspoon red pepper flakes (optional)

  • 1/2 cup chicken stock

  • 2 cups heavy cream

  • 2 ounces cream cheese, cubed

  • 2 sprigs fresh thyme

  • 1/8 teaspoon black pepper

  • 1 cup grated parmesan cheese

  • 2 tablespoons minced parsley (for garnish)

Directions

  1. Cook the Pasta:

    • Cook the pasta according to the package instructions. Reserve a cup of pasta water before draining.

  2. Prepare the Steaks:

    • Pat the steaks dry and season both sides with salt, pepper, garlic powder, and thyme.

    • Heat a large skillet on medium-high heat. Add olive oil, then sear the steaks for 3 minutes per side or until desired doneness is achieved. Remove from the skillet and cover with foil to keep warm.

  3. Make the Sauce:

    • In the same skillet, reduce the heat to medium and melt butter. Add minced garlic and red pepper flakes (if using) and sauté for 10 seconds.

    • Add chicken stock to deglaze the pan, then bring it to a simmer. Stir in heavy cream, cream cheese, thyme, and black pepper. Continue simmering until the sauce thickens.

    • Add the cooked pasta to the skillet and toss to coat. If the sauce is too thick, add some reserved pasta water to adjust the consistency. Stir in parmesan cheese and mix until smooth.

  4. Serve:

    • Slice the rested steak into thin slices against the grain.

    • Serve the steak slices over the pasta, garnishing with fresh parsley. Enjoy!
